Inherited from Old Italian onne~onni (with /ˈɔ-/ per the Latin etymon), from Latin omnis, from Proto-Italic *opnis, ultimately from Proto-Indo-European *h₃ep- (“to work, toil”). The development of palatalized /-ɲ-/ and closed /ˈo-/, already attested in the thirteenth century (ógne, later ógni), are due to the word being frequently unstressed. Variants with /ˈɔ-/ still survive in much of Tuscany and Central Italy.
