Semi-learned borrowing from Late Latin canonicus (“canon”), from Ancient Greek κανονικός (kanonikós). Cognate with Portuguese cónego, Galician cóengo. The sense of “corn salad” seems to come by ellipsis from (hierba de los) canónigos.
