From earlier lunching, of uncertain origin.
Possibly related to lunch, q.v. It is unclear which came first. Possibly influenced by nuncheon (“light snack taken in the afternoon”).
The "sausage" sense is probably a shortening of luncheon sausage or luncheon meat.
