In summary

From Middle High German pābest, bābest, from earlier bābes, from Old High German bābes, from Old French pape, from Latin pāpa, pappa (“father”, originally). Doublet of Pfaffe. Forms in B- remained predominant during the 15th and 16th centuries before they were gradually displaced by the more Latin-like forms in P-. The contemporary standard spelling was conclusively established by Adelung.
